Sourdough course
During the course, you will receive practical training in how to bake with sourdough and decorating techniques, what happens in the dough when it ferments, and why it is good for the body and the unique and diverse bacteria in the gut. You will learn how to keep your starter fresh and in good condition, and we will go over the different ancient grain varieties.
The course includes:
5 hours of practical training, ready-baked: rolls, 1 sourdough bread, 1 Christmas bread, bake at home: 2 bread doughs, sweet dough, a scoring blade (without handle), sourdough starter, recipes with methods, and a good lunch with toppings from local farms and organic farms, and freshly baked sourdough rolls made with emmer wheat and land wheat. Also, a short tour of the cluster farm if desired.
Please bring 1 jam jar, 2 bread pans, 1 proofing basket, 1 baking bowl, good shoes, an apron, kitchen towels, and preferably a cooler to store your dough in for the trip home.
